Directions
Par boil the potatoes, drain well & fluff up. Add plenty of goose fat to a roasting tin and place in a pre-heated oven for approximately 10 minutes. Once it is just smoking, carefully add the potatoes. Baste well and place them in the oven for approximately 45 minutes. Turn and baste occasionally to ensure they are golden & crunchy.
