Organic, Simple, Healthy, and Great Tasting
I have been using this pasta for many years. It is a Canadian product, so I stockpiled it before the tariffs hit. It is made from organic chickpea and yellow pea flour. It provides fiber and a relatively high protein content. The main thing is the texture and taste. Before heating the water, I put just a teaspoon of avocado oil, salt, and black pepper. When it is finished, it smells like something boiled in chicken broth. The taste, right out of the pot, is good. Occasionally, I will add some cheddar cheese powder and cayenne pepper and eat it as a snack. It maintains its texture very well, and cook time can be varied to suit your preference for texture. This stuff is just great!

Noodles held up perfectly through shipping, cooking, and eating
Worried about the noodles breaking in transit, I gently shook the box after it arrived and heard an ominous rattle rattle. But when I opened the box I realized that was just the perfectly whole noodles shifting in their boxes. I just made a vegan lasagna with the noodles, cashew ricotta, zucchini, onions, spinach, and sauce, and it was quite delicious. I stuck to the cooking time (35 covered, 10 uncovered, plus time to rest and cool) and the lasagna turned out perfect! The noodles held up enough to be cut and served in a perfect square. The flavor and texture of the cooked noodles was spot on. Excited to try the leftovers tomorrow. So happy with this purchase.

Best Gluten Free Pasta...period
I've tried every type of gluten-free pasta. Lentil, rice flour, corn, and even chickpea from other companies. The flavor, rigidity of the pasta, cook time... all of it. Just the best. I would highly recommend you try this pasta. They have different types. I would recommend that if you're using a warm sauce that you under cook by a minute or two and then let them finish in the sauce. They soak up sauce really well but will get soggy and break down if you cook them to "just-right" then put in the sauce. Flavor is unique unto itself as is every pasta that I've tried. There is no substitute for wheat flour. But the flavor from these seems to add to the dish not detract. Some of the lentil pasta I've had are so strong and some of the rice pastas are so weak in flavor. Try the various shapes and enjoy!!!

Good source of protein, iffy on the texture
I love that the pasta is filling, tastes great and can dedinitely replace regular pasta in that regard. i have to use 2 packs for my family of 3 and we have a little leftover for the next day. The texture isnt grainy at all but it definitely is chewy and cooking it longer doesnt resolve anything just makes it break away and get mushed together. I didn't follow the instructions on the box cause it needed more time. My least favourite is the shells because that seems to be the worst in terms of texture and chewiness. But I would keep buying them until I can find something else comparable.

Beware Amazon shipping - the cardboard shipping box looked like an accordion
I love the product and the shell shape. Perfect for dumping a whole box into a pot of vegetable soup. They are very tasty and kept their shape after a long cook, etc. BUT ... I bought a case of six and they showed up with one of end of the shipping box looking like an accordion, and of course the pasta boxes on the inside had also been crushed and were open on the end. Because it is food they are not returnable and OH, does that irritate me. Nothing to be done about it but if you care about whether your food is exposed to the air before you receive it, just be aware and beware.

Lasagna noodles just didn't work
I had really hoped these would be a good substitute for regular pasta, but they just came out as bean tasting mush in the midst of the sauce and cheese. Very disappointed. I hate writing bad reviews, but these just shouldn't be marketed as lasagna noodles.

Wholesome pasta choice!
I try to eat low carb, yet pasta is a weakness for me. I was excited to find this healthy alternative! I have the pasta shells made from Chickpeas and Lentils. I like my pasta basically overcooked and soft so I was worried about them not retaining good texture. I was right. I overcooked them and they got a bit mushy. No worries, I'll get the cook time dialed in better next time. I made a cheese sauce. Texture is a bit different, but definately doable. The flavor was good, absolutely no issues there. 13 grams of protein, 6 grams of fiber and lots of vitamins. Organic, product of Italy. All in all, a wholesome product, a bit on the pricey side, but worth it once I get the cooking time figured out for optimal texture.

Just a few healthy ingredients
These noodles have turned out some really good lasagna. Some of the gluten free options are made with unhealthy ingredients. Chickapea has only organic and only necessary ingredients, no junk fillers. It was a good value and cooked the same as 'traditional' lasagna. The noodles held up well and cook time was the same as other lasagna. I also tried it in a lasagna slow cooker, with somewhat less favorable results, possible because that is a moist cook method. The noodles were less firm when cooked that way. High protein, some fiber and organic; can't beat that!
