I bought a hgst 6tb drive. why won't windows 10 initialize it?

It can be. I use it in my NAS, but I don't see any reason it can't be used internally in your PC.

Will this fit in a standard sata docking station?

Yes...should fit with no problem. Standard 3.5 inch hard drive. I am using this hard drive 24/7 and it works fine.
