can I add loose tea, sugar and spices directly into the kettle while it boils? kinda like making chai?

No you cannot or it’ll boil over and/or damage the device. It’s a kettle, not a teapot or a saucepan. Kettles should only ever heat water in them. You pour the hot water from the kettle into your teapot or your cup to make your drink.

How loud is the ready beep? I don't like loud noises in the morning or want my kids waking up.

The three beeps are not loud. They’re rather quiet but effective. I doubt they would wake your children.
