Review: great fish cookbook - I love the different variations with each recipe and the explanations/ comments at the beginning. There are lots of good recipes in here. Great variety. Review: So You Wanna Cook Fish? - I noted that the Kindle version already had some good reviews and was available immediately, but I still like a physical book to work with (to notate how things work in my kitchen, oven temps, cooking times, etc.) so I was cool waiting a couple weeks for this book to arrive. As the title indicates, the recipes in this book are broken out into chapters by the covered 10 major fish types. The variety of recipes within each chapter is excellent, with something for everyone, and plenty that will entice you to try something new. Everything tried so far works great, including tuna noodle casserole. (Seriously!), fish tacos, crab chowder. Recipes are straight-forward in detail, easy to understand, and as a bonus, seafood types cross-chapter, creating hundreds of receipe variations. As a just above "heat and serve" beginner, I like variations that simplify a recipe, mostly meant to save time, but is a great place to start learning! I liked the inclusion of total prep and cooking time with the recipes, tho in my case itโs something to aim for since it takes me about twice as long to prep. I will be working out of this book for quite some time. Author/Chef Terri Dien is a solid writer. The chapters and each recipe have informative introductory paragraphs, and one even provided a good laugh -- the fictitious Game of Thrones river trout recipe! And it is so nice to see sardines and mackerel back on the menu where they belong. The book introduction is full of facts regarding seafood in general, touching on selection, cost, and health benefits, all with a nice eye toward sustainability.

No photographs is a bummer but great recipes.
Just arrived and I like what I see except it did not have any photographs and that is a huge bummer. Usually I return any cookbook without photographs. I guess the author doesnโt know that we eat with our eyes first.

Fish Fears Be Gone!
The Big 10 Fish & Seafood Cookbook by Terri Dien is a real treasure. First, it is full of creative and tasty recipes (80!) such as Pan-Seared Salmon with Smoked Paprika and Harissa Carrots and Coconut-Poached Tilapia with Bok Choy and Mushrooms. Second, the recipes all emphasize fresh local ingredients and use less sodium and sugar than many other cookbooks. Third, it is full of great instruction and detailed techniques that ensure even the most nervous of home-chefs can succeed. This is where Dien's experience as a long-time culinary school chef-instructor really comes through. She makes it easy to decipher how to remove bones from fish fillets and which herbs and spices complement each type of fish. Fourth, it is educational. Dien offers up lots of great information on the health benefits of fish and on sustainability. I've already made the Salmon Fillet Provencale En Papillote and the Poke Bowl. Both were delicious. I highly recommend the Big 10 Fish& Seafood Cookbook!

Fantastic seafood cookbook
As a pescatarian, I love finding cookbooks that fit in my lifestyle without having to make substitutions. This book is laid out very well - organized by the type of fish/seafood with 8-9 recipes each. I immediately marked about 20 that I wanted to try and have done 3 so far that have been great. It is nice to see some recipes calling for nice fresh fish and others for canned/cheaper versions. There is also a great section in the beginning about each type of fish and environmental sustainability practices and how to support the best type of farming when purchasing.

You'll feel like Terri is there with you teaching you the best methods
A delightful cookbook. I loved the layout, the basic recipes, and the options. I may now actually try mackerel and sardines. The first recipe I made was the crab cakes and the remoulade from the fishcakes section. Both were really easy to prepare and tasted delicious. I loved this book so much that I bought it (I'd first read it on Kindle Unlimited) and I bought it for my daughter who is always trying to learn to make fish. Now she'll feel successful making fish for lunch and dinner.

Terrific recipes but photos would be nice in a cookbook
I like the recipes in this cookbook but was disappointed that there are not many photos. Usually a cookbook has one photo for each recipe. The preview of this book gives the feeling that there are lots of images in the book.
