When I temporarily couldn't get Bob's Red Mill semolina, I turned to this Antico Molino Caputo version. After all, I love the company's 00 flour, so I trusted them to deliver good semolina. Wow. This reground semolina doesn't have the grittiness that other brands do because it's so fine. Although it needs a little more liquid to properly hydrate the dough, the resulting pasta is both smooth and strong. I've also used this to make Italian bread, and it works just as well there as it does with pasta. Again, because of how fine it is, you may have to add more liquid. Worth the price
Needed semolina flour to make fettuccine with my new pasta machine. The flour is very finely ground, worked great in the pasta machine and tasted great. Although the price as compared to hard store bought pasta is more, the value is in the freshness and taste. I also like that it is Non-GMO, free of additives and direct from Italy. A 2.2lb package is enough to make pasta for a few meals and well worth the price.

Caputo semolina is exceptional!! However, the seller sent an expired product and this is unacceptable!!

Quick "best by date"
I was very disappointed that I could not use this in time. I bought this item the end of July and it's best by date was the very next month (August). I guess next time I'll only buy if I have plans to use it immediately.

Das Molino Caputo Semola hat sich bei uns in der Küche schnell als fester Bestandteil durchgesetzt. Für uns ist es schlicht das beste Semola auf dem Markt. Die Qualität merkt man sofort: Das Mehl ist extrem fein gemahlen, wirkt fast seidig und lässt sich hervorragend verarbeiten – egal ob für Pizza, Pasta oder das Ausarbeiten von Teigen. Beim Strecken von Pizzateig sorgt das Semola für eine ganz andere Haptik als klassisches Tipo 00. Der Teig bekommt mehr Struktur, bleibt aber geschmeidig und lässt sich deutlich leichter formen. Besonders bei neapolitanischem Stil macht sich das bemerkbar: Die Teiglinge gleiten sauber über die Arbeitsfläche, ohne zu kleben oder übermäßig auszutrocknen. Gleichzeitig entsteht beim Backen eine feine, leicht goldene Textur an der Unterseite – genau das, was man bei erstklassigen Pizzen sehen möchte. Auch geschmacklich bringt das Caputo Semola einen kleinen Bonus mit. Es wirkt neutral, aber verstärkt die Aromatik lang geführter Teige, ohne dominant zu werden. Man merkt, dass Caputo hier auf konstant hohe Qualität setzt – keine groben Körner, keine schwankende Konsistenz, einfach ein durchgehend zuverlässiges Mehl. Wer gerne Pasta selbst macht, wird ebenfalls glücklich. Das Semola verbindet sich sauber, sorgt für eine elastische Teigstruktur und gibt der Pasta den typischen Biss, den man aus italienischen Küchen kennt. Unterm Strich: Für uns aktuell das Maß der Dinge, wenn es um hochwertiges Semola geht. Die Verarbeitung ist erstklassig, das Ergebnis überzeugt jedes Mal aufs Neue, und gerade beim Pizzabacken spielt es seine Stärken voll aus. Ein Mehl, das man einmal probiert und dann dauerhaft im Schrank haben will.

Das Semola von Caputo ist einfach einsame spitze . Es klebt nichts fest und die Pizza gleitet super schön über den Schieber in den Ofen . Für alle die es noch nicht ausprobiert haben beim Pizza backen , holt das unbedingt nach . Es erspart euch wirklich Nerven
