I waited for this book with great anticipationโthe kind that often leads to disappointment. Not in this case! I love this book. The tartes are so temptingโthe kind youโd work on all day for very special friends! My first attempt will be the Foret Noire Tarteโitโs just so pretty and, reading the recipe, I can almost taste how delicious it will be! The format of the recipes is no fussโvery concise and clear, and I think some previous baking experience is a good idea. Beautiful, well-aranged and professional book.
Stunning book! Very professional, though descriprive and well-arranged. Each recipe done step by step with a lot picures. Patisserie technologies explained briefly, but on point. Love it!

like every other patisserie book....not reliable in a vacuum
have to use alot of other supplementary recipes to cook from this, but the portions are at least more or less accurate. but I am starting to realize patisserie books in general you have to supplement with alot of outside resources and iterate until outcome is achieved.
