Great gluten-free and blood sugar control option for Ramen!
These noodles have helped me make healthier and better-tasting meal substitutions as I've been experimenting with Ramen at home! It started with a Korean food truck where I tried bibimbap and Korean Sweet Potato glass noodles, and then I started looking for non-wheat Ramen noodles in general on Amazon (as well as how to make simple bibimbap). I've been trying out different ways to have simple Ramen at home, and these buckwheat noodles have been great for this, as well as the O-Food Korean Sweet Potato Glass Noodles (also on Amazon), and Lotus Foods brown rice noodles (also on Amazon). These buckwheat noodles are not made of the usual wheat, so it's a nice option for better glycemic control as well as gluten-free. The buckwheat also includes a really nice health ingredient D-chiro-inositol, which has been shown to reduce blood sugar levels. The noodles have so far tasted great and provide a really great tasting and healthy meal idea, especially when put together within a whole nutritionally balanced meal such as with lots of veggies on top and/or protein. No carb crash! And less weight gain! And tastes great! A suggestion for a way I've been trying these has been combining simple bibimbap-type of steamed veggies on top (or any microwave-in-bag stir-fry veggies or other veggies), tossed with even just simple sesame oil (can add rice vinegar too), salt, and garlic powder. You can also use any easily found stir-fry sauce bottle from grocery store such as Thai sweet red chili sauce or others, or maybe some K. bbq sauce, or simple bibimbap sauce. Then add tofu or meat, egg, etc as well if you want. Or kimchi with bibimbap! Additionally, the Koyo reduced-sodium ramen packages (also here on Amazon) have really great-tasting, low-sodium seasoning packages that I've been combining with these other non-wheat noodles mentioned above. These Lotus noodles make for a great Ramen experience at home, and are a good plant-based and nutritionally balanced meal for health too, as well as diabetes / gluten-sensitivity friendly! I would definitely recommend!!

Great taste to me
I grew up in Hawaii and alot of my great friends invited me to eat at their house to eat. This reminds me if the special times with the family and friends because noodles and rice was the main food because of how high food is at the store. This product is so good

Does not look good to eat and I cannot return
I was disappointed when I first saw the dried noodles. They didn't look very appetizing to me. However, after boiling the noodles a few times and pairing it with a good sou mo p basel

Natural and pure!
I functional dyspepsia, related to GERD, I literally didn’t eat for two months because of the burning pain in my throat, nose and eyes! I’m finally able to eat due to medications. I tried to eat several types of noodles with buckwheat but I just couldn’t tolerate it. These are the only noodles I can tolerate! Thank you!

Perfect GF noodles! So thankful
Literally the best gluten free noodle I’ve ever had & I’ve tried MANY. Cook separately, and then add to your dish. We made a clear soup with chicken and added ramen. It was phenomenal!! My family isn’t gluten free, just me - and they loved these!

Okay For What They Are
As with any 100% buckwheat noodle, they're going to give off a lot of starch. That's okay if you first cook them alone and rinse them in a strainer before adding them to the main pot or dish. But if you don't your ramen broth will be very thick to the point of goopy and you prbably won't like it. So remember - cook alone, rinse, add to main pot or dish. Also don't expect them to taste like regular ramen noodles made of wheat or rice flour. They won't. They'll taste like buckwheat.

Best Ever!!
Why did you pick this product vs others?: These ramen noodles are the best I've ever had I am a poor soul with celiac disease so I must be very careful with all my food. I subbed them for the white rice that you get with Chinese take out (white rice is not very healthy for you). I've probably bought about 10 boxes or more to date.. I just can't be without them If you have gluten intolerance don't hesitate to try them. Even my friends that can ingest gluten love them and so do kids love them. Super easy to use Just drop the Individually wrapped noodles in 2 cups of boiling water or your favorite broth Make sure they are covered with water or your favorite broth and boil for 8 minutes and drain you have a meal add shrimp, Crab, Chicken, Salmon, and veggies etc You can make a plethora of Meals with these noodles. With the ease of use and the meal combinations you can't go wrong!

Even Delicious Cold
These are very nutritious, they are just as tasty as any other noodle. I had gotten a little busy after I chopped my raw vegetables over these, added a little Celtic salt and added sofritas to them so I wasn’t able to eat them hot. To my surprise, they were super delicious, has a very nice taste and texture to them and are individually wrapped, so I don’t have to try to keep them fresh. I cooked mine in the microwave for 8.30 minutes, drained and added healthy toppings. I highly recommend them. I don’t think I’ll buy the rice noodles anymore. I really like these and they are individually wrapped. ***Sofritas: I get mine from Chipotle's by the scoop. But since they have oil and heavy seasonings, I boil mine in a saucepan on the stove to get their ingredients off. I rinse with purified water and press with paper towels to remove excess oil. I refrigerate them for about a week and add to meals as desired. I’m sure they can be frozen as well. I purchase 5-10 scoops at a time because the texture satisfies my desire for animal flesh or meat.
