Any suggestions on what to buy to hang this from the ceiling (on a stud)?

Ceiling studs are made for holding ceilings.... UP. they are not engineered to support a DOWNWARD force. You need to install a pair of single joist blockers between 3 studs. Otherwise your ceiling WILL sag or yhe floor above the swing WILL dip

How do you connect it to a doorway chin up bar?

You could do it by tying the rope to the bar. It would work, but might not be the best way to do it. Doable though.
