If you wanted to cut these into several rows to do a small backsplash would it work or would the backing come off?

You can cut them into rows with a box cutter. I put them on a sacrificial piece of wood while cutting and the backing stayed on. Definitely use a very sharp blade and some good pressure when cutting and it should work. You want a very clean cut so you're not pulling the backing as you go. Also be sure to not leave any backing protruding out from the edge of the tile or it will mess up your measurements and keep you from getting it flush against whatever it's next to.
