How wide are the snoke racks

The outside of the unit is about 28", so the racks are about 24". Plenty wide for a full rack of ribs and deep enough for 3 racks (flat), maybe 4.

Does this grill / roast and bake also or just smoke?

I have done cookies on mine so you can bake and I've done a casserole and there may not be a direct flame but crank the heat up and I've done steaks and burgers with grill marks

No, but at high temperatures makes a lot less smoke.
