Pinhead (or steel-cut) oatmeal is simply coarsely-chopped oats. They are whole oats, cut with a blade (made of steel), rather than ground using stones. It can be used in a variety of recipes, both sweet and sour, including porridge, flapjacks, coarse biscuits and vegetarian burgers. Steel-cut oats are now very trendy, because people have seen the benefits of eating coarsely-chopped oats. The larger pieces digest more slowly, and hence keep you fuller for longer. The oats release energy slowly. Great for a morning porridge that keeps you satisfied until lunch! Directions To make porridge: Soak these oats for 1 hour before use. Add a cupful of oats to a pint of water in a saucepan and bring to a steady simmer for 10 minutes. Add milk and bring back to a simmer before serving with fruit or honey to taste. To use in biscuit and flapjack mixes: Soak the oats for 1-2 hours. Mix butter and molasses in a pan and heat gently. Add the oats, together with raisins and other fruits and cook for 10 minutes. Spoon the mixture onto a baking tray and bake for 15-20 minutes. To use in veggie burgers: Soak the pinhead oats for 1-2 hours. Cook potatoes, carrots, leeks and other vegetables to taste. Mash the potato finely and chop the other vegetables. Fry garlic and onions and stir in the mix. Add a cupful of pinhead oats to a saucepan, cover with water and bring to a gentle simmer for 10 minutes. Combine all of the ingredients and form into patties.
