Last time I saw this in production, it was macerating in an oak barrel that contained 1,000,000 litres, not what I would have considered a "small oak barrel" as the description beside it said it was the largest oak barrel in the world. For anyone who hasn't tried it, it's a similar flavour to Dubonnet, although much less sweet - and without the "mixed herb" flavour of some martini/vermouth drinks.

A delicious alternative to many sweet vermouths
Byrrh is wine-based aperitif made with muscat wine blended with bitter orange, cocoa, coffee and cinchona as a source of bitter quinine. There's no added sugar. You could say Byrrh is to red vermouth, as Cocchi Americano is to white vermouth. It's delicious stuff. It's old drink, but one that's just maybe starting to become trendy again. I'd say most people haven't heard of it still. So if you know someone who's a fan of making craft cocktails, this would make a great gift. They're unlikely to already have it in their drinks collection. It's worth experimenting with this in cocktails to see how you best like to use it. Try substituting red vermouth for Byrrh 1:1 in pretty much any cocktail. In fact, this is so delicious, it's worth experimenting with "upside down" versions of cocktails when you're using Byrrh. So, for example, if your standard recipe includes 2 parts spirit, 1 part red vermouth, try swapping things around. That is, 1 part spirit, 2 parts Byrrh. Or, if you want to try some cocktails "designed" for Byrrh, you'll find a few in the Savoy Cocktail book from the 1930s - the "Byrrh Cocktail", "Byrrh Cassis", and the "Byrrh Special Cocktail".
