how easy is it to put together?

Very simple and fast to put together .

Do all of the pieces fit in the bag? If not, how difficult would it be to carry them around if I've not got a car?

All that really fits in the bag is the cajon itself, but I also put the hit hat cymbals, shaker, and sticks inside as well. You could finagle the pedal inside the cajon's sound hole, but it's not worth damaging the drum or the pedal cable. Without a car, it might be a little tricky to transport. I usually make one trip from the car but it's not easy.

Why is hi hat rod shorter than it appears in the picture?

I'm not sure what you mean- the high hat is fully adjustable despite being scaled down from that of a standard drum kit. Maybe yours just needs to be adjusted?

Are there specific directions on how to put the drum set together? Online possibly?

No there are no specific directions. Found it very easy to put together. Basically like putting a simple drum set together.
