The dropper tube is glass, I can’t be sure about the rubber top.

what is bitters used for

The bitter drops I know are called "angostura" and is for cocktails, they infuse aroma and bitternes, you should use very little, you can find recipes easily on google.

Will these hold acetone?

I don't see why not. They are glass, after all, and I don't think that acetone damages glass. I'm using them for alcohol ink, and they're great.

are they self sealing bottles?

I would say by looking up the definenition self sealing, these bottles are not. However, no leaks and they are high quality
